INGREDIENTS: (Serves 1)
- 125g Microwave Long Grain Rice
- 100g Cherry Tomatoes
- 100g Raw Courgette
- 1/2 Yellow Pepper
- 1/2 Red Onion
- 150g Tofu
- 1 Spring Onion
- 1/2tsp Soy Sauce
- 1/4tsp Sesame Oil
- 1/4tsp Garlic Powder
- 1/4tsp Onion Powder

- 64.5g Carbs
- 16g Protein
- 8.5g Fat
METHOD:
- Cook your microwave rice as per instruction. Once cooked add to a bowl and stir through some dried chilli flakes and chopped spring onion
- Meanwhile, chop the tofu into bitesized pieces and coat in soy sauce, sesame oil, onion powder, garlic powder and a little black pepper
- Add to a hot pan and fry until crispy
- In a seperate pan, add the courgette, red onion, tomatoes and pepper and cook for 2-3 minutes
- Add all ingredients to a bowl and serve
