INGREDIENTS: (Serves 1)
- 3 Slices Tofu
- 4 Cherry Tomatoes
- 30g Pasta (Uncooked)
- Handful Spinach Leaves
- 1/2 Red Onion
- 1/2 Red Pepper
- 50g Green Olives
- 1/4tsp Smoked Paprika
- 1/4tsp Zatar
- 10g Vegan Pesto
MACROS:

METHOD:
- Cook your pasta in a saucepan, when cooked to your liking, stir through the pesto to coat
- Slice the tomatoes, red onion and red pepper and place on a plate with the spinach
- Sprinkle the tofu with the paprika and zatar and add to the salad
- Add the olives and enjoy
