INGREDIENTS: (Serves 1)
- 2 Crumpets
- 2 Eggs
- 1 Lean Bacon Medallion
- 2 Mushroom
MACROS:

METHOD:
- Pop your crumpets into a toaster
- Whilst crumpets are toasting slice your bacon and mushrooms and begin to fry in a pan with a little low cal cooking spray
- When bacon and mushrooms are beginning to brown crack 2 eggs into the pan and add salt and pepper
- Continuously stir the mixture to ensure it does not stick or turn into an omelette
- Once egg is cooked spoon mixture out onto crumpets and serve
