INGREDIENTS: (Serves 2)
- 240g Chicken
- 1 Packet Long Stem Microwave Rice
- 200g Broccoli
- 100g Mixed Mushrooms
- 1 Red Onion
- 2tsp Wholegrain Mustard
- 60ml Single Cream

METHOD:
- Place a non-stick frying pan on a medium-high heat. Place all the mushrooms into a dry pan, tearing up any larger ones. Let them toast and get dark golden and nutty, tossing occasionally
- Peel and slice the chicken breasts into strips
- Spray the pan with low cal cooking spray and add the onion and chicken to the pan
- Place the broccoli into a pan of boiling water and simmer for 6-10 minutes depending on how soft you like your vegetables
- When the chicken has been cooking for 5 minutes add the mustard, cream and 150ml of water. Bring this to the boil, then simmer until you have just got a loose saucy consistency and the chicken is cooked through. Taste and season with salt and pepper
- Pop the rice in the microwave for time specified on packet
- Drain the broccoli and serve alongside the mustard chicken and rice
