INGREDIENTS: (Serves 2)
- 1 Lemon
- 1tsp Ground Tumeric
- 2 x 100g Smoked Basa Fillets
- 15g Ginger & Garlic Paste
- 5.5g Vegetable Stock Mix
- 1 Spring Onion
- 80g Spinach Leaves
- 300g Steamed White Basmati Rice (Microwave)
- 1/2tsp Dried Chilli Flakes

METHOD:
- Heat a large frying pan and spray with fry light
- Squeeze the microwave rice to break up any lumps and pour it into the pan with the ginger and garlic paste, mix together
- Sprinkle the tumeric and vegetable stock into the pan and add 200ml boiled water, mix together
- Add the spinach and 1/2 chilli flakes to the pan
- Give everything a good mix up and then sit the basa fillets on top of the mixture. Cover with a lid and cook for 4-5 minutes
- Whilst the fish is cooking, trim and slice the spring onion, half the lemon
- Break the basa fillets into pieces in the pan and stir through the rice, cook covered for 1-2 mins further
- Once cooked, add the juice of half the lemon and a pinch of salt and stir
- Serve the basa rice with a slice of lemon and topped with the remaining chilli flakes and a generous grind of black pepper
