INGREDIENTS: (Serves 2)
- 200g Canned Tomato Frito
- 3 Garlic Cloves
- 1tsp Cumin Seeds
- 1 Green Chilli
- 185g Canned Black Beans
- 300g Canned Red Kidney Beans
- 12g Vegetable Stock Mix
- 10g Coriander
- 2tsp Smoked Paprika
- 15ml White Wine Vinegar
- 4 White Potatoes
- 185g Canned Butter Beans
- 40g Chipotle Paste

METHOD:
- Pre-heat the oven to 220’c / gas mark 7 and boil the kettle
- Drain and rinse the kidney beans, butter beans and black beans all together
- Heat a large oven proof caserole dish over a high heat and spray with fry light, add the drained beans with smoked paprika, cumin seeds, tomato frito, vegetable stock and chipotle paste, give everything a good stir
- Crush the garlic with the side of a knife and add to the dish with 250ml boiled water, bring to the boil over a high heat
- Add the potatoes to a baking tray and prick them with a knife, drizzle with a little olive oil and season with salt and pepper, place in the oven
- Cover the casserole dish with a lid and place in the oven with the potatoes for 45-50 minutes or until potatoes are cooked through and chilli has thickened
- Meanwhile, slice the green chillies and place in a small bowl with the white wine vinegar to pickle, set aside
- Finely chop the coriander, including the stalks
- Serve the chilli topped with coriander and pickled green chilli with jacket potatoes to the side, enjoy!
