INGREDIENTS: (Serves 1)
- 150g Raw White Potato
- 2 Large Eggs
- 2 Egg Whites
- 1 Bacon Medallion
- 4 Mushrooms

- 11g Fat
METHOD:
- Thinly chop the potato and place them in the microwave for 3 minutes to soften
- Heat a frying pan with coconut oil and add the potato to fry for 2-3 minutes
- Add the bacon and mushrooms and fry for a further 2-3 minutes
- Whisk the eggs and egg whites in a jug and season with salt and pepper
- Add the egg mixture to the frying pan and cook until cooked through
- Serve
