INGREDIENTS: (Serves 1)
- 2 Large Eggs
- 2 Slices Smoked Salmon
- 2 Crumpets
- 1/2 Avocado
- Salt & Pepper

METHOD:
- Pop crumpets into toaster
- Mash avocado in a bowl to desired consistency
- Whilst crumpets are toasting poach 2 eggs
- Add avocado and sliced salmon to crumpets
- Top with poached eggs a little salt and pepper
- Serve
