INGREDIENTS: (Serves 4)
- 2 Teaspoons of ground Tumeric
- Salt & Pepper
- Dried Mixed Herbs
- 400g Chicken Breast (raw)
- Low Calorie Cooking Spray
- Mushrooms
- 1 Onion
- 1 Chicken Stock Cube
- 240g Long Stem Rice (uncooked)
- 2 Tablespoons Half Fat Creme Fraiche
- Tenderstem Broccoli
- Spinach
MACROS:
- 397 Calories
- 46g Carbs
- 40g Protein
- 8g Fat
METHOD:
- Start off by seasoning your chicken breasts with salt, pepper and dried mixed herbs.
- In a shallow frying pan fry the breasts each side for 4-5 minutes on medium heat.
- Chop up your mushrooms and onions and put the kettle on to boil.
- Add the mushrooms and onions to the pan and cook until the onions are see through
- Add 300ml of low salt chicken stock and turn the heat down
- Grate in fresh turmeric root or alternatively add 2 tsp of ground turmeric
- Simmer for a minimum of 30 mins.. the longer you leave it the more tender the chicken breast
- Wash your rice, put on to boil for 10 mins and steam the tender stem broccoli at the same time.
- Add a couple of dollops of low fat creme fraiche and 2 generous handfuls of spinach
- Serve
