INGREDIENTS: (Serves 2)
- 2 Medium Plums, stoned and cut into segments
- 2 Raisins and cinnamon bagel thins, cut into small chunks
- 100ml Un-Sweetened Almond Milk
- 1/4 Teaspoon Almond Extract
- 1 Tablespoon Granulated Sweetener
- 1 Large Egg

METHOD:
- Preheat the oven to 190’c
- Heat the almond milk, almond extract and 1.5tsp sweetener over a low heat (do not boil)
- Whisk the egg in a bowl and then whisk in the heated almond milk
- Spray two oven proof dishes with fry light and add half of the bagel thin to each
- Top the thin with half of the plums and sprinkle with ½ tsp sweetener and then place the rest of the bagel on top
- Top with the remaining plums and egg mixture. Sprinkle another ½ tsp sweetener and leave on the side for 10 minutes for the mixture to soak in
- Place in the oven for 10 minutes/until egg has set and the top is golden!
- Serve
