INGREDIENTS: (Serves 2)
- 100g Uncooked Basmati Rice
- 1 Chicken Stock Cube
- 1 Red Pepper
- 1 Onion
- 200g Raw 5% Fat Beef Mince
- 2 Bacon Medallions
- 2 Teaspoons Cajun Seasoning
- 2 Teaspoons Garlic Granules
- Dash Worcestershire sauce
- 3 Mushrooms
- 100ml Beef Stock
- Small Bunch Spring Onions

METHOD:
- In a saucepan, cook the rice and add the chicken stock cube before bringing to the boil. Once the rice is cooked place it to one side
- Spray a frying pan with low calorie cooking spray and cook the beef mince on a medium heat
- Once the beef starts to brown, add the onion and bacon and cook for a further 3-4 minutes
- Add the cajun seasoning, garlic granules and Worcestershire sauce to the frying pan and stir
- Add the mushrooms and peppers and pour in the beef stock
- Cook until mushrooms and peppers are softened
- Add the cooked rice and spring onions to the frying pan and stir until everything is mixed through and hot
- Serve
