INGREDIENTS: (Serves 2)
- 240g Chicken Breast
- 60g Chopped Chorizo
- 400g Raw White Potato
- 1 Red Pepper
- 12 Vine Tomatoes
- 1 Red Onion
- 2 Handfuls Baby Spinach
- Garlic Fry Light
- 3 Mushrooms
- 1tsp Lazy Garlic

METHOD:
- Pre-heat the oven to 190’c and line a baking tray with tin foil
- Chop the potatoes into medium sized chunks and place on the baking tray, spraying with fry light
- Place the potatoes into the oven for 20 minutes
- Meanwhile, cut your chicken breast into similar sized pieces and prepare the vegetables, keeping everything chunky
- Remove the baking tray from the oven and add the chicken, chorizo, pepper, onion, mushrooms and top with a sprinkle of oregano. Return to the oven for 15 minutes
- Remove the tray from the oven and add the vine tomatoes. Place back in the oven for a further 10 minutes or until chicken and potatoes are completely cooked
- Top the baking tray with the spinach and stir to combine
- Serve
