INGREDIENTS: (Serves 1)
- 1 Medium Chicken Breast
- 1 Tablespoon Tomato Puree
- 50g Cooked Chicken
- 1 Mushroom
- 2 Cherry Tomatoes
- 1/4 Pepper
- 30g Mozzarella Cheese
- 1 Teaspoon Oregano
- 150g Sweet Potato
- Light Cooking Spray
- Garlic Granules

METHOD:
- Pre-heat the oven to 190’c
- Peel and chop sweet potato into wedges and part boil for 8-10mins or until they have began to soften slightly
- Whilst potato is simmering butterfly the chicken breast to make it as flat as possible.
- Spread tomato puree, oregano, veggies onto the chicken breast
- Remove potato from water and put onto an oven tray – spray potato evenly with low cal spray and garlic granules
- Put both the chicken breast and potatoes in the oven for around 35-45 minutes or until golden
- Around 10 minutes before end of cooking remove chicken from oven scatter cheese over and return to oven.
- Serve
