INGREDIENTS: (Serves 2)
- 1 Apple
- 150g Puy Style Lentils
- 5g Sage
- 50g Soft Cheese
- 11g Chicken Stock Mix
- 1 Brown Onion
- 2 Garlic Cloves
- 80g Fine Green Beans
- 120g Chicken Breast

METHOD:
- Peel and finely slice the onion, then heat a large pan and add fry light, add the onion with a pinch of salt and cook for 4-5 mins
- While the onion is softening, grate the apple, strip the sage leaves from their stems and roughly chop half of the leaves finely
- Peel and finely chop the garlic and dissolve the chicken stock mix in 450ml boiled water
- Once the onion has softened, add the grated apple, chopped sage and garlic to the pot and cook for 1-2 mins
- Rinse the lentils in a sieve under cold water, add the lentils to the pot along with the stock, bring to the boil, then reduce and cook for 30-35 mins until tender
- While the lentils are cooking, trim the green beans. Season the chicken with a pinch of salt and pepper
- Heat a large frying pan and spray with fry light. Once hot, add the chicken and cook for 3 mins on each side or until golden
- Once golden, reduce the heat and add a small splash of water to the pan and cover with a lid. Increase the heat to medium and cook for 5 mins
- After 5 mins, remove the lid and add the green beans and remaining sage leaves to the pan, then cook, uncovered for 5-7 mins or until chicken is cooked through
- Once the lentils are tender, add the soft cheese, season with salt and pepper and stir to combine
- Serve the lentils topped with the chicken breast, green beans and crispy sage leaves
