INGREDIENTS: (Serves 1)
- 120g Chicken Breast
- Mixed Mediterranean Vegetables
- 75g New Potatoes
- Salt & Pepper
- Paprika
- Dried Mixed Herbs
- Low Calorie Cooking Spray

METHOD:
- Start off by chopping your new potatoes in half and steaming for 7-10 minutes
- Next up season your chicken with salt, pepper, paprika and dried mixed herbs
- Whilst you are waiting, panfry the chicken breast for 3-4 minutes each side (a griddle pan works best!)
- Chop up a selection of peppers, red onions and courgettes - the more colours the better!
- Transfer the chicken on to a baking tray and place in the oven for 15-20 minutes
- Add the steamed new potatoes and veg to a tray, season with mixed herbs and place in the oven for 25-30 minutes
- Check the chicken is cooked then leave to rest under foil for 5-10 minutes
- Serve
