INGREDIENTS: (Serves 2)
- 300g White Potato
- 240g Skinless Chicken Breast
- Mixed Salad Leaves
- 1/2 Lemon
- 2 Slices Wholemeal Bread
- 1tsp Lazy Garlic
MACROS:
- 440 Calories
- 61g Carbs
- 55g Protein
- 3g Fat
METHOD:
- Peel and slice your potatoes into chip shape and part boil for 5 minutes
- Drain potatoes add spread onto a baking tray, spray low calorie cooking spray over the potatoes adding salt and pepper then bake in over for 25 - 30 minutes or until golden at 180 degrees
- Whilst chips are cooking butterfly both chicken breasts, ensuring they aren’t too thick around 1-2cm 4. Tear the bread into a food processor and add the teaspoon of lazy garlic
- Blitz into fine breadcrumbs
- Pour the crumbs over the chicken and roughly pat into each side
- Put a pan onto medium heat spray with low cal cooking spray and fry on each side until cooked through
- Remove chips from oven and split between plates. Add the chicken
- Serve with a lemon wedge and side salad
