- Prawn Jambalaya & Cajun-Style Mayo

INGREDIENTS: (Serves 2)
- 1 Lemon
- 5g Wholegrain Mustard
- 10ml Tomato Ketchup
- 15g Roasted Garlic Paste
- 2tsp Smoked Paprika
- 210g Jumbo King Prawns
- 280g Cooked White Long Grain Rice
- 1 Sweet Pointed Pepper
- 30ml Mayonnaise
- 160g Blanched Peas
- 1/2tsp Ground Turmeric
- 1/4tsp Cayenne Pepper
- 1tsp Ground Coriander

METHOD:
- Heat a large frying pan and spray with oil, slice the pepper and add to the pan once hot. Cook for 1-2 mins or until softened
- Pop the rice into the microwave as per packet instructions
- Once the pepper starts to soften, add the turmeric, coriander, paprika and garlic paste to the pan and cook for 30 seconds until fragrant
- Drain the prawns and add to the pan with the peas, stir everything together and cook for 5-6 minutes or until almost cooked through
- Whilst the prawns are cooking, combine the mayo, tomato ketchup, wholegrain mustard, cayenne pepper and juice of 1/4 lemon in a bowl
- Once the prawns are almost done, add the rice to the pan with a pinch of salt and cook for 1-2 mins or until prawns are cooked through
- Once done, add juice of 1/4 lemon and give everything a good mix up
- Serve the rice and prawns in a bowl and drizzle over the mayo
