INGREDIENTS: (Serves 2)
- 2 Samon Fillets
- Asparagus
- Salt & Pepper
- Olive Oil
- 1 Red Onion
- 2 Large Tomatoes
- 1 Broccoli
- 1/2 Courgette
- 1 Red Pepper
- 3 Garlic Cloves
- 1/2tsp Thyme
- 1/2tsp Oregano
- 1/2tsp Garlic Granules
- 1tsp Light Soy Sauce
- 1/2tsp Cumin
- Fry Light

METHOD:
- Pre-heat the oven to 200’c (Fan)
- Drizzle olive oil on to the bottom of the baking tray and add your chopped vegetables, spreading evenly
- Peel garlic cloves, crush and add to the tray
- Season with salt and pepper, thyme, oregano and garlic granules. Mix everything together so that all vegetables are evenly covered in the seasoning and oil
- Meanwhile, season the salmon with salt and pepper, soy sauce and cumin. Season the asparagus with salt, pepper and garlic granules. Spray the asparagus with fry light and shake to ensure fully coated in the seasoning
- When turning the vegetables over, add the salmon and asparagus to the oven for 20 minutes
- Remove from the oven, plate up and serve!
