INGREDIENTS: (Serves 1)
- 120g Raw Basa Fillet
- 50g Uncooked Basmati Rice
- 1/2 Red Pepper chopped into slices
- 1/4 Courgette Finely Chopped
- 1/4 Cup Frozen Peas
- 1/2 Tablespoon Fish Sauce
- 1 Tablespoon Light Soy Sauce
- 1 Teaspoon Lazy Garlic
- 1 Shallot
- 1/4 Teaspoon Lazy Chilli
- 1 Handful Spinach
- 1 Teaspoon Coriander Leaf
- 1/2 Vegetable Stock Cube
- Salt & Pepper

METHOD:
- Add your rice and stock cube to a saucepan and cook using the packet instructions, once cooked place to one side
- Heat a wok using a few sprays of garlic frylight. Once hot add 1 tsp lazy garlic and the shallot to the pan and fry
- Add the courgette, red pepper and peas to the wok and fry over a medium heat until they begin to soften
- Add the cooked rice, fish sauce, soy sauce and salt and pepper to the pan and combine, leave to heat through
- Meanwhile heat a frying pan using garlic frylight, add 1 tsp lazy garlic and ¼ tsp lazy chilli to the pan and fry
- Add the basa fillet on top of the garlic and chilli and salt the other side, leave to cook for 2-4 minutes
- Flip the fish and cook on the other side, sprinkle the top with coriander leaf
- As the fish finishes cooking, add spinach to the rice mixture and combine so that it wilts
- Dish up the rice and place the basa fillet on top!
- Serve
